Food Favorites (Crockpot)

Just a Sampling of my Favorite Recipes!

I love my Crockpot so this first section is dedicated to my Crockpot(s)

BBQ Chicken

Ingredients:
6 boneless, skinless chicken breasts
1 lg bottle of BBQ sauce (whatever kind you like)
Optional
6 slices of Mozzarella Cheese
6 slices of Bacon - We use Turkey Bacon

1. Put a small amount of BBQ sauce on the bottom of the crockpot
2. Place 6 chicken breasts in the crockpot (I use frozen chicken breasts & put it on low all day but you could use thawed chicken breasts and cook for a shorter time)
3. Then pour the remainder of the bottle of BBQ sauce onto the Chicken breasts.
4. Cook on High for 4 hours or low for 8 hours - I use frozen and 8 hours is good enough to cook them while we are at work/school.
5. When you get home (about 20 min before you are ready to eat) place 1 strip of bacon on each chicken breast and put a piece of cheese on top of the bacon.
6.  Enjoy when the cheese is slighly melted.

I typically serve this with Quinoa or a rice and a vegetable (corn or broccoli)


Cheeseburger Soup

Ingredients:
6 cups Chicken Broth
1 lb (ish) of ground turkey/beef
finely chopped carrots, onion, peppers (to your liking)
2 - 3 cans of diced potatoes (or you could use potatoes and chop up - but I like the efficiency of the canned ones)
1/2 of a small block of velveeta cheese (I totally guess on the cheese amount - so add more or less to your liking)
1 can of cheddar cheese soup

1.  Put Chicken Broth, Ground Turkey, carrots, onions, peppers into the crockpot.  (if you use potatoes instead of canned ones - add those in now too). 
2.  Cook on high for 4 - 6 hours or low for 8 -10.
3.  When you get home (about 30 - 45 minutes before you are ready to eat), put the can of cheddar cheese soup and the velveeta (in small chunks) into the crockpot.  Also add in the potatoes if you have not already done so. 
4.  Turn Crockpot on High and stir every 10 minutes or so.
5.  Serve when cheese is melted and potatoes are warm


Homemade Pulled Pork/Chicken

My kids love pulled-pork that we get at Grandma and Grandpa's house.  However, that is 4 hours away and we are not able to go there to get it at the drop of a hat. 

Here's a shortcut!

Ingredients:
6 chicken breasts
BBQ sauce
Pampered Chef Shredder/Chopper

1.  Place 6 chicken breasts in the crockpot
2.  Cover with BBQ sauce (keep some for after cooking and shredding)
3.  Cook on high for 4 hours or on low for 8 - 10 (I use frozen chx breast - so I cook it all day on low)
4.  Remove Chx from crockpot to a large skillet or bowl. 
5.  Chop/Shred chicken with PC shredder
6.  Add more BBQ sauce to your liking
7.  Place on Hamburger buns (or you can place into a hot dog bun and add cheese - toast in the oven - YUM!)

We eat these with Sweet Potato Fries and a Salad.


Crockpot Black Bean Soup
NEW RECIPE - Disclaimer - haven't tried this one yet.... but it's on the menu for this week....

Ingredients
--3 cans of black beans


--1 can of Itallian stewed tomatoes

--2 cups of broth (vegetable or chicken)

--2 T taco sauce (great use for those taco bell packets!)

--1 1/2 cups chopped vegetables



Use Blender to blend/grind up the vegetables.  Then dump pulverized vegetables into stoneware insert.
--empty all cans into the crockpot insert. do not rinse the beans or drain the tomatoes.

--add broth and taco sauce.

--mix with spoon.
--cook on low for 8-10 hours or high for 5-6. Soups taste better the longer you cook it.
Before serving, use an immersion blender to soupify the beans and tomatoes.

Serve with some shredded parmesan cheese and a dollop of sour cream.
